Castilian Chickpeas

Chickpeas are medium sized legumes, which acquire a creamy texture after being cooked. They have a rough skin and a yellow tone. They are used to cock chickpeas stew, tripe, the typical “Cocido Madrileño”, or any other type of dish. They can also be eaten cold in a salad.
