Villacastín (Segovia) a land of gentle and noble men, is located in the middle of the Castilian mountain range. Here at an altitude of 1099 metres we produce our Lomo Ibérico, one of the noblest pieces of the Iberian pig, which is bred in freedom. It is marinated with paprika, salt and garlic, and then cured for six months in our drying cellars.
Slightly streaked, intense pink colour. It has a fresh aroma of paprika and country herbs. It is soft on the palate, not very salty, elegant and natural.
Our Lomo Ibérico Olmeda Orígenes should be served between 17° and 20°. In order to enjoy and taste all the subtleties of this product, it should be cut in very fine slices. Undoubtedly, it is a delicious appetizer, which can be accompanied with red wine.
