What an extraordinary and marvelous cheese! It is made in Illas (Asturias) with pasteurized cow’s milk, and left to ripen for two months in a natural cave. It is firm and oily cheese with veins of blue mould, and has an intense, long lasting flavor, with a hot and salty aftertaste.
