This cheese is unique. It comes from a blend of raw milks from cow, goat and sheep. After being made it is smoked and left to age for three months in natural caves in Asturias.
The presence of fungal species gives the natural rind a characteristic colour. “Queso Gamonedo” has a semi-hard texture. It often has blue streaks inside. This cheese has an intense smoked aroma, with banana nuances and a slightly spicy flavor.
