Only twenty San Simón da Costa cheeses are produced daily. This great cheese is made with milk from the “Rubia-Gallega” cow; it is slightly smoked in birch wood. This cheese has an acorn shape and a fine creamy semi-hard texture. It has a whitish and yellowy color with sweet aromas of smoke and countryside. On the palate it has a mineral taste and slightly salty and smoked flavor.
