Olmeda Orígenes’ star product, an exclusive item from top-quality Iberian pigs fed outdoors in the dense dehesas of Extremadura: a thin slice of this Iberian ham is a true delight for all the senses, with an incomparable flavour and an extraordinary aroma. These black Iberian pigs graze freely and their sole diet consists of acorns that fall from the holm oaks and cork oaks of the Mediterranean forests. Our pigs consume 9 kg of acorns and herbs daily, which gives their meat aromatic notes of nuts. Iberian pork is easily recognised by its black hoof and fat marbling, typical of this exclusive breed. When the pigs reach a minimum weight of 180 kg, they are slaughtered and the ham undergoes a natural curing process lasting 36 to 48 months. They are selected at their optimal stage for consumption, with many pieces showing “points,” indicating that these Iberian Hams have been perfectly cured. Thanks to their acorn-based diet, these hams are not only a true delicacy for the palate but also have health benefits, with high levels of oleic acid and help to reduce bad cholesterol levels.
