The Roman aqueduct of Segovia watches as Castilian innkeepers have been preparing these magnificent suckling pigs for centuries and centuries. The Segovia suckling pig is fed exclusively on mother’s milk until it reaches the optimal age and weight between 4 and 6 kg. Once cooked, the skin is crispy and golden, while the meat is tender and juicy. It is very rich in monounsaturated and polyunsaturated fatty acids, recommended in a healthy diet.
