At Olmeda Orígenes, every product goes through a meticulous logistics process to ensure its quality and safety at every stage—from harvesting in the field to delivery at the final destination.

Here’s how we manage the logistics so that our products arrive with maximum freshness and care:


1. Harvesting: An Artisanal Process

The journey of our olives begins in the fields, where each one is picked by hand. We use the traditional method called “ordeño”, in which olives are collected one by one and placed into a small container known as a macaco, worn by the harvester.
This artisanal approach ensures each olive is handled with the utmost care from the moment it is picked.


2. Preservation: Brine and Lactic Fermentation

Once harvested, the olives are placed in brine, which not only preserves them but also initiates the lactic fermentation process—vital for developing the distinctive flavors of our olives.


3. Transfer: From Barrel to Container

After fermentation, the olives are transferred from barrels to new containers. This step ensures that the olives maintain their quality throughout the process.


4. Weighing: Manual Precision

Each container of olives is weighed manually to ensure uniformity. Consistent weight across all containers is essential to maintain the quality and reliability of the final product.


5. Pasteurization: Ensuring Food Safety

Next, the olives go through pasteurization, a thermal treatment process that eliminates pathogenic microorganisms. This guarantees that the product is safe to eat and has a longer shelf life without compromising quality.


6. Drying: Maximum Freshness

After pasteurization, the olives are gently dried to remove excess moisture, which preserves their freshness and ensures they remain in excellent condition during transportation.


7. Labeling

Once dried, the olives are labeled with the Olmeda Orígenes brand, ensuring that each unit is clearly identified and meets our strict quality standards.


8. Final Packaging: Safety and Presentation

After labeling, the olives are packed into boxes sealed with our custom branded tape—guaranteeing both the protection of the product and a professional presentation that reflects our brand identity.


9. Palletizing: Ready for Shipment

The labeled boxes are arranged on pallets, which are then wrapped in protective film to ensure that products remain secure and undamaged during transit.


10. Delivery: Ready for the Final Destination

Once the pallet is fully secured, it’s prepared for shipment.
