Anchodinas are a gift from the Atlantic to delight all the senses. These are fresh Atlantic fish cured in the cold Castilian air. This fish is properly preserved, brought inland from the blue waters to be marinated, thus maintaining all its properties.
Anchodina is the clean fillet of the sardine “pilchardus.” Each Olmeda Orígenes Anchodina is hand-cleaned, deboned but with the skin left intact. After seasoning, it is preserved in oil and left to dry for a few days.
