The anchovy is a medium-sized fish caught in two different seasons: spring and autumn. Each fillet is cleaned by hand and deboned, then rinsed with water and marinated in vinegar, water, and salt. In this mixture, the anchovies acquire their characteristic and delicious flavour before being packed in plastic trays and subjected to an anisakis prevention treatment to ensure the highest quality.
