The anchovy is a medium-sized fish caught in two different seasons: spring and autumn. Each fillet is hand-cleaned and deboned, then rinsed with water and marinated in olive oil, vinegar, water and salt. In this liquid, the anchovies acquire their characteristic and tasty flavour, before being packed in plastic trays and subjected to an anisakis prevention treatment to guarantee the best quality.
