Olmeda Orígenes Iberian pancetta is made from the finest raw materials, consisting of pork skin with a layer of fat and meat. Its succulent flavour makes it an ideal ingredient to enjoy fried with a little oil, grilled, or used to add an extra touch of flavour to traditional stews. Our pigs are raised outdoors in the green mountains of Segovia, and we carefully oversee the entire process to create unique and unparalleled pieces. Pancetta comes from Iberian pigs fed on acorns during the montanera season, then salted, marinated, and cured. This is very juicy meat that can even be enjoyed raw in thin slices, the most traditional way to eat Iberian pancetta.
