Idiazábal Cheese Natural/Smoked

Our cheesemaker in Udabe-Beramendi (Navarra) produces this top-quality Idiazábal Cheese with Protected Designation of Origin for Olmeda Orígenes. Made from the milk of Latxa and Carranzana sheep, Olmeda Orígenes Idiazábal Cheese is hand-moulded and matured for five months to ensure the finest quality.
We offer both the natural Idiazábal and the smoked version, which is placed in an artisan smoker using beech or birch wood. It has a straw-coloured rind and a distinctive, intense aroma. Its flavour is deep, appetising, and gives a full-mouth sensation. It has a slight herbal note and a lingering aftertaste reminiscent of hay.
