Olmeda Orígenes
From the warm waters of the Sargasso Sea, Northern Bonito or Thunnus alalunga crosses the Atlantic Ocean to reach the Bay of Biscay along our Cantabrian Sea coasts. Only in summer, using rod, hook and bait, they are caught one by one following the same traditional methods to protect the species and respect the ecosystem of our sea. The trunk is the loin of the Northern Bonito which, once cooked, is hand-packed in a glass jar with olive oil and a pinch of salt added.
