Olmeda Orígenes
The partridge is a small bird weighing approximately 400 to 500 grams that lives freely throughout Spain. The partridge from Olmeda Orígenes comes from the province of Jaén (Andalusia) and is hunted during the shooting season between October and February. These animals have very clean meat, with an intense flavour and a reddish-white colour. They are raised in the wild and feed on what they find in nature, mainly grain and field grass, which gives them a higher level of vitamins and minerals than other meats. The partridges are selected according to their age and size before being eviscerated and plucked by hand.
