
Olmeda Orígenes
Our San Simón da Costa Cheese follows a completely artisanal process: from grazing the cows on natural pastures to smoking with birch wood, this cheese is the result of a long tradition of Galician cheesemakers. Due to its traditional production method, only 20 pieces are made per day. The milk for this cheese comes from the “Rubia Gallega” breed, which grazes freely in Villalba (Galicia). It has a Protected Designation of Origin ensuring no additives or preservatives are added to the milk. The cheese is hand-moulded and aged in a maturation chamber for approximately 45 days.
