The deer is a mammal weighing about 200 kg that lives wild in the province of Jaén (Andalusia) and is available during the hunting season between September and February. They are very tasty animals, and their meat is very healthy since the animals are born and live their entire lives in the wild with a completely natural diet. It is one of the leanest red meats you can find, as these animals barely contain any fat, making it very healthy with a high content of iron and vitamin B12. With the finest cuts of deer, we make the venison burgers from Olmeda Orígenes. The burgers are made with venison (mainly from the neck and shoulder) mixed with pork belly and spices. Since venison is very lean (that is, without fat), it is necessary to mix it with some pork fat so the meat doesn’t become dry and tough.
