Venison is a mammal weighing around 200 kg that lives free-range in the province of Jaén (Andalusia) and is available during the hunting season from September to February. These animals are very flavoursome, and their meat is very healthy since they are born and live their entire lives free-range with a completely wild diet. It is one of the leanest red meats available, as these animals contain very little fat, making it very healthy with a high content of iron and vitamin B12. The ragout consists of venison meat cubes from the ham, neck, and shoulder, all mixed together.
