Our Cod Olmeda Origenes is fished with traditional hook in the cold and clean waters of one of the best fishing grounds in the world, the Faroe Island. Once in the San Sebastian port, our cod is submitted to the traditional salting process “salazón”, keeping all its properties and reaching its characteristic savour.
Our cod loins are presented perfectly clean and boneless, allowing an easy cut and are perfect to make several dishes like the famous “Bacalao a la Vizcaína” o “Bacalao al Pil-Pil”.
Before cook, this product needs to be soaked in water for at least 48 hours.
