An Artisan Process from San Adrián, Navarra
At Olmeda Orígenes, our piquillo peppers have their roots in San Adrián, Navarra, a region renowned for its rich agricultural tradition. The peppers are harvested by hand, one by one, filling buckets that are then transported by tractor to the factory, where a unique production process begins.
Step 1: Traditional Wood-Fire Roasting
Once at the factory, the peppers are poured into a hopper, lifted by an elevator, and dropped into the oven, where they are roasted over a wood fire. Fire control is essential here: a dedicated person adds wood to the fire approximately every five minutes and adjusts the fan to maintain the exact temperature.
This traditional roasting method gives piquillo peppers their distinct flavor and texture. Once roasted, the peppers continue down a conveyor belt to the next stage.
Step 2: Manual Peeling and Selection
The peppers first pass through a peeling machine that removes part of the skin. Next, they arrive at a manual selection line, where a team removes the stems and hand-selects only those peppers that meet the highest quality standards.
After this, the peppers go through a second peeling machine, leaving them completely clean.
Step 3: Final Inspection and Bottling
Next comes a final inspection, where any remaining skin is carefully removed by hand, ensuring that only perfect peppers proceed.
In the bottling area, the peppers are sorted by quality and size and then manually counted before being packed. Each can is weighed at the end to ensure the exact quantity.
Step 4: Sterilization and Final Packaging
Finally, the cans undergo sterilization in a specialized machine. This step is key to ensuring that the product retains its freshness and flavor over time.
After this process, the piquillo peppers are ready to be enjoyed at any table, carrying the authentic flavor of Navarra.
